Lifestyles: You will fall in love with Sticky Toffee Pudding
The first time that I ordered Sticky Toffee Pudding in a restaurant I did not know what to expect.
The name itself could make you just go with the chocolate cake but no. This is truly a case of don’t knock it until you have tried it. Once you make and enjoy this dessert it will surely become one of your favorites.
The combination of the warm cake slathered in the rich and buttery homemade caramel sauce is unforgettable. If you really want to gild the lily add a dollop of whipped cream or a scoop of vanilla ice cream.
This dessert is great for any occasion and for all seasons. Make it for someone special today.
Ingredients:
1 cup Sugar
1/2 stick of room temperature softened Butter
1 Large Egg
1 ½ cup All Purpose Flour
1 teaspoon Baking Powder
1 ¼ cup Boiling Water
¾ cup Pitted Chopped Dates (or ¾ cup Golden Raisins)
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
Sauce:
2 cups firmly packed Brown Sugar
1 stick Butter
½ cup Heavy Whipping Cream
For the Pudding:
Preheat the oven to 350 degrees and butter a 8” x 8” baking pan. Using an electric mixer in a large bowl, beat the butter and sugar until combined and fluffy. Add egg and beat for 2 more minutes. Slowly sift in the flour and baking powder and beat for 1 minute more. In another bowl mix boiling water, dates (raisins), vanilla extract and baking soda, add to the butter mixture and beat until blended. Pour into the buttered baking pan and bake for 30 minutes or until a toothpick inserted into the cake comes out clean.
(Do not over bake)
For the Sauce:
In a heavy saucepan bring all sauce ingredients to a simmer. Stir to dissolve the sugar, then simmer for 3 minutes stirring occasionally.
To Serve:
Turn on the oven’s broiler, pour the sauce over the warm pudding and broil until slightly caramelized for about 2 minutes.
Serve immediately by cutting into squares with whipped cream or vanilla ice cream.
