Cousin Eddie’s Stuffed Bell Peppers
Ingredients:
4 Large Bell Peppers
1lb Lean Ground Beef
1 large egg
2 tablespoons chopped onion
10 crushed saltine crackers
1 teaspoon salt
1 16oz jar of Spaghetti sauce
¾ cup shredded mozzarella cheese
4 tablespoons Cousin Eddie’s Sauce
Directions:
Preheat oven to 350 degrees
Cut thin slice from stem end of each bell pepper to remove top of the pepper. Remove seeds and membranes, rinse peppers.
In Large bowl mix Ground beef, egg, onion, crackers, salt and Cousin Eddie’s sauce thoroughly.
Place cleaned bell peppers in a deep oven pan, so they are standing upright. Spoon in the beef mixture until the bell pepper is full.
Pour the Spaghetti sauce on and around the peppers in the pan and place in oven for 45 mins to 1 hour.
Remove pan and sprinkle mozzarella cheese on top and cook until cheese is melted.
Remove from oven and let rest for 10 minutes before serving.
